Happy Thursday to you!I came home to Sten and the Cubs game on TV. What a treat! Now I am counting down the minutes until 6:30pm when I get to help Ka tie celebrate her Birthday! We are meeting at Caro Mio. Its a wonderful BY O in the Ravenswood neighborhood.
On Monday night I made Thai Chicken Pizza. Wowie Zowie. Please try this recipe. It is to die for. My mom sent it to me last year when we spent our Tuesday nights with Bryce and Ryann (bro and sis in law) switching off cooking and hosting Biggest Loser at each other's houses. I love those memories, they are very dear to my heart. When Drake came along it was more like all of us talking and holding and ooo-ing and aaah-ing rather than watching, but it was still OUR time to always be together. Wednesday love.

Wednesday. Almost to the weekend! What a glorious thing. I have much, muCH, MUCH to look forward to this weekend. Not only am I off 4 days straight. But I get to see a lot of loved ones all at once. Sten and I leave Saturday morning for Pittsburgh, PA! Road Trip! I am overly excited! On the list of things to do in the car includes:1. listen to pop music and dance 2. play the alphabet game 3. get a REALLY good snack at the gas station 4. figure out our biggest dreams in life, and maybe think of where we want our summer home to be someday. 5. stop at crazy rest stops. 6. drink a red bull 7. eat some candy (but not too much because of my teeth) 8. open up the windows, put on our shades and stick our arms outside. 9. Be together!
I get to see this wonderful man: What a Grandpa he is. He loves Jesus, our family, donuts and fishing with all his heart and I love being with him. He always makes me smile. Even just when I think of him.

Brown Sugar Biscotti

Finished product in my favorite glass jar. The recipe. The ingredients. The mixer, doing its thing. this is what it should look like before you add the chocolate chips. it should be really heavy, and not too sticky. make it into a BIG log, or 2 small logs... and sprinkle (or spray) a little h2o on the top, so it is smooth and won't crack during baking. fresh out of the oven, i got that fancy "silpat" from my italian friends for our wedding. i LOVE it for biscotti, and cookies... but esp. biscotti. slice the log and lay the pieces flat. pour yourself a cup o joe in your favorite mug and dip away.
Here's the recipe-- just in time for my good friend Katie Ekstrom's Birthday. We used to always have these on hand for morning chats in our apartment senior year. I have to give her credit for finding this recipe. Although, I don't know where it came from :(

Petite lasagnas- try them you'll like them!

It's a beautiful morning in Chicago. My goal was to sleep in until 8a, but I woke up wide-eyed at 5:41a. I've already had a productive morning. I got and spent time doing my devotions and found out it had been too long since I have spent a significant time with God. I am making it my #1 priority this week. Last night Sten and I went to Willow Creek, and it was amazing. I love that church mostly because the heart of the church beats for the ones who are lost. I want to emulate that in my own life. I want to 'be about that' more than I ever have before. Driving home Sten and I couldn't wait for dinner. Before church I prepared everything to make these tasty morsels (from this amazing blog) so I could pop them in the oven when we got home. OH boy are they good! So fun to eat too. Enjoy!

wine tasting = success.

Isn't Sten the most adorable man you've ever seen? I was looking a little like it was the end of the day... frizzy hair! That's about the amount of wine the servers would pour in your glass (slightly disappointing) Wine tasting last night was a total success. It was so fun to do this activity with Sten. We sampled 8 different wines with cheese pairings, and one Italian Liqueur- Dumante Verdenoce at the end that I wanted to buy so badly but it was $48.99. That was my very favorite (expensive taste) but I also LOVED Vignalta Fior d'Arrancio- it was a sparkling white & Truth- a peppery red. I have decided that I am missing out on good wines and pairings by never drinking white. So, today at the grocery, Sten and I went out on a limb and bought some pinot grigio. I'll let you know how we like it.
I have been baking, cooking and photography for my next posts ALL day. I am SOOO excited to post my makings.

tasting time.

I have not abandoned blogging, but I have worked 52 hours this week. I am going to attribute this to my lack of posts...

In other news, I have been looking forward to tonight since Feb. 24th. For my Birthday, Sten bought us wine tasting at the Gourmet Grape. I am SO excited to do this with him and since it is a beautiful day I think we just may have to find a patio to sit at outside after.

I really have nothing to show for today. I left for work in such a hurry I completely forgot to put on ANY makeup and I walked out the door with our car keys, which would have been fine ANY other day except for today because Sten was going to take the car into the shop to get a little checkup. Hot. Mess. But God must love me because after what felt like 40 days and 40 nights of pure gray and rain the sky was so blue and the sun was so bright. I needed that today.
It's a busy week, month, year... Why does time have to go by so fast? This past weekend was seminary graduation and I thought to myself that is going to be us in 2 years. 2 short years. I already have a list in my head of the things I am going to miss: living on a college campus, getting free pizza when its finals week and having a student id that gets me 5% off at Andy&#…

a thankful and meek heart.

Some weekend highlights:
- Friday night @ Jack and Gingers with lots of fun people to celebrate Emily coming to visit. As Sten and I approached the door I saw the little lady in a sparkly scarf and adorable flats and my heart felt happy and light. It was so fun to catch up with everyone. - Planned my week menu which includes: spicy black bean burger salad, brown sugar chicken, teryaki meatballs, and garlic chicken... - Grocery store run-- much needed. There isnothing like a fridge and pantry full of food. - Northbrook dinner and game night- Anderson, Carlson, and Johnson Hand and Foot. Not to brag, but the Carlson's won :)
- Took a sleeping pill and slept in until 9AM this morning. 11 hours of perfect sleep. Just a lazy rainy Sunday in the Carlson home. Sten and I just finished a game of Yahtzee and then I made some hot tea. Have you ever had Good Earth tea? It's a Sten and Erica favorite. happy moments

Friday. I've looked forward to this day since about Tuesday, and then I got to work this morning and the first thing I find out is that I am going to be working tomorrow 6:30-12p. You know what, I don't even mind. I actually like work right now. I mean, would I rather be at home with my man making omelets and lounging in our pj's until 1pm? Yes. but still. I've been really enjoying life lately. I feel happy and thankful for this city, my friends, my incredible husband, my job, and the sun. I want to bottle up my emotions and keep them by my bedside so each morning I can remember this feeling. This picture is from the summer of 2006, I remember feeling exactly the same way during this time of my life. Sten and I had just finished our Sophomore year and we went to his Grandparent's cabin up north MN. Crock Pot Santa Fe Chicken

This is an easy, make ahead the night before, sit in the crockpot making your house smell good all day and come home to a delicious meal kind of recipe. I found it on this blog. It has great recipes and if you are a weight watcher it tells you points.... I have made this 3 times since printing out the recipe about a month ago. It is the perfect recipe if you are having a big group over because it makes a lot of food! Hope you enjoy as much as Sten, Tyler and Julie did when they came of for dinner a few weeks ago :)

5 things

I adapted this from one of my favorite new blogs. Every Tuesday I am going to say the 5 BEST things about today. #1. work was busy busy and went by like a flash of lightning #2. I got my daily quotient of Calcium by eating greek yogurt this morning, broccoli and spinach at lunch, and homemade pizza at dinner. However, eating calcium is a wash unless you accompany it with some Vitamin D.... #3. Got LOTS of Vitamin D as it was the FIRST nice day in about 247 days. Took full advantage by running to Lincoln Square where I met Kate, Laura and Karoline for Patio Happy Hour at Bad Dog Tavern! #4. Made a delicious homemade pizza with real pepperoni and real mozzerella cheese. Usually I do turkey pepperoni and 2% cheese... Not tonight friends #5. Got to make coffee for my amazing husband and send him off the library with a kiss. 3 days left of this year!

Franks and Dawgs! Gourmet hot dogs. BEFORE Clockwise from top: Brunch dog with breakfast sausage, bacon, maple infused mayo and a fried egg. Truffle Mac and Cheese with truffle mac n cheese, Parmesan, brioche, thyme and breadcrumbs. The Cheese Head with caramelized onions, grilled portabella mushrooms, smoked Gouda and chives... and Peter got another one, but I don't know what it was.

It was a fun night out with good people. I highly recommend this joint!
In other news, I have become obsessed with these 3 blogs #1.#2.#3. I got off the train today and was searching for the perfect twig to add to this vase that is currently empty on our tv stand. I can't wait to show you. I added paper flowers to it and also re-painted a frame, and added a new piece to our wall. Sten liked the addition. I always get nervous he is going to think my design is a little out there, but in the end I think he knows all to well- "a happy wife = a happy life." We had a great night- we walk…

VERY special weekend.

Talk about a BIG weekend. Seriously. I am filled to the brim with love and food. I took lots of pictures to document this celebratory weekend full of MOTHERS. Here are some things that I did #1. Gave homemade Mother's Day cards to all the mothers in our lives. (If you ever need someone to make you cards- let me know- I LOVE DOING IT)
#2. Celebrated my cousin Jeremy's graduation from UIC. Aunts, Uncles, Cousins, Mom, and Grandma in CHICAGO!
#3. Had everyone in our little apartment and got to use our NEW TABLE (it was a hit)
#4. SOOOO proud of my cousin! He is so awesome and he deserves to eat on the "You are special today" plate and eat 10 slices of this fantastic cake. (I can't take credit for this cake)
#5. Celebrated with my mom at Tre Kronor. So what if we were a little tired? and walked over in our sweats? That's whats so great about mom's... You get to be 100% you! I am in LOVE with this woman. She's the one who read me Bible stories at night and prac…

dental work.

This picture is pre-dental problem days, look how young we look and how great my smile is.
This is a real big day in my life. Since roughly 2 years ago I started having really bad dental problems. It started with just some cavities and a possible root canal. I didn't have dental insurance at the time and was too scared to think of what this would cost us. Then the pain got SO bad I woke up Sten in the middle of the night balling my eyes out. While in CO I got 2 root canals (and a million cavities filled) but didn't get the crowns put on. One of the teeth from the RC decayed, then cracked and then FELL OFF! Since starting my job at AVT I have AWESOME dental insurance- thank you God. I had my tooth (well, what was left of it) extracted and I now I have a fake tooth! Today I went to the dentist and got my last crown done and my last cavity filled!!!!!!!!!!! That means NO dentist until my bi-yearly cleaning in September.

stuffed peppers.

I adapted this recipe from skinny taste blog and made it into a recipe using ingredients from my pantry-- besides the peppers (obvs.)

Finished product- bright, yummy and healthy!
A fraction of what goes into the pepper-- red pepper, onion, galic, cilantro, white beans, adobo peppers/sauce, canned chicken

lettin' it simmer
.... ready to go in the oven, cover with foil and put a little water in the pan so it steams. don't add the cheese on top until the last 5 mins.

I like recipes that you can add a little of this and a little of that. It's an even better day when you have all the stuff in your pantry. I think thats what makes cooking fun! Sten gave this recipe a thumbs up and I did too. I made mine spicy with the adobo peppers, but if you like a little less spice, leave them out!

Here's the recipe:
Stuffed Green Peppers {servings: 2+} total time: 45 mins

2 Green Peppers
1/4 Red Pepper
1/2 onion
3 cloves garlic
1 abobo chile + some of the sauce
7 oz. white beans

Weekend update: - 5 hour drive to WI - Watching the Royal Wedding with Gma and mom - Mike's Birthday dinner with the whole fam - Half marathon - Lunch at Norske Nook - A welcome home from my awesome little husband. Couldn't wait to show you photo's from my weekend. It was so fun to go to Wisconsin and run with Emily. I also got to spend quality time with 2 of the women I hold extremely near and dear to my heart: my mom and my grandma. We played games, laughed, baked and entertained.The half was in one word- windy. At one point I wasn't sure if I was moving and at about mile 10 I thought my fingers were for sure going to fall off from frost bite. But, I truely believe your body can always do more than you think and if you put your mind to it-- you will finish! AND we finished!! 2 hrs and 12 mins. later we ate a half a banana and walked/limped to the car and blasted the heat.Emily and I had some great conversation along the way and we laughed a lot.
