This is an easy, make ahead the night before, sit in the crockpot making your house smell good all day and come home to a delicious meal kind of recipe. I found it on this blog. It has great recipes and if you are a weight watcher it tells you points.... I have made this 3 times since printing out the recipe about a month ago. It is the perfect recipe if you are having a big group over because it makes a lot of food! Hope you enjoy as much as Sten, Tyler and Julie did when they came of for dinner a few weeks ago :)
Look at this nice group of Seminary Friends! We are thankful for them.
- 1 lb of boneless skinless chicken
- 14.4 oz can diced tomatoes with mild green chilies
- 15 oz can black beans
- 8 oz frozen corn
- 14.4 oz can fat free chicken broth
- 1/4 cup chopped fresh cilantro
- 3 green onions, chopped
- 1 tsp: garlic powder, onion powder, cumin, cayenne pepper
- salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, green onions, and spices in the crock pot. Lay chicken on top. Cook on low for 10 hours, or high for 6 hours. Half hour before serving, remove chicken and shred. Return to crock pot, and stir in.
Its recommended to serve over rice. But its SO good in a flour tortilla with rice, salsa, guacamole and jalapenos.

I think its time to make a summer goal list. I am going to start thinking of things. Especially since this week we bypassed spring and went straight to summer. NOT complaining though, the heat feels GREAT!
