Date Night

Yesterday was the perfect day. For real. I got to hold my co-workers little 12 week old baby, had a great day at work and then came home to my man, margarita's and the best date night. We got ready, then took the train to Southport. Put in our name at Tango Sur (where there was an hour and a half wait) then walked over to Cullen's for a drink. We had great conversation and many laughs.
We were seated at 8:15p and it was worth EVERY minute of the wait time. This is one of my favorite spots in the city to dine.
BYOB. Argentinian Malbec- a perfect pair with our Argentinian steaks.

I hope Sten and I always find time for nights like last. I just kept thinking how much fun it is to be married to him.

chili lime pork

This has been SUCH a busy week! Last night we got free tickets to the Cubs game! It was one of those late August summer nights that are perfect for being at the ballpark. Sten and I had such a good time people watching-- I mean, paying close attention to what was happening on the field. and... THE CUBS WON! On Tuesday night I tried a new recipe from this blog called Budget Bytes it's awesome and she has some really fun recipes. My pork doesn't look like her's because I couldn't find Boneless Pork Loin at Harvest Time. But these little cutlets worked just fine and were very tasty.
Step 1. In a small bowl whisk together 2T. oil, 1 T. soy sauce, 1T. chili powder, 1/2 T. minced garlic and lime juice from 1 medium lime.
Step 2. Place the pork loin in a large zip lock bag and pour in the marinade. Squish around the mixture and refrigerate for 1 hour or more.

Step 3. Preheat oven to 400 degrees. Heat a large skillet with oil. When its hot add the meat (do not discard the ma…

Happy 1st Birthday Elin!

Can't believe this little girl is ONE already! It was a rainy Birthday to remember and I am so glad we were able to be a part of it. So what if the Air and Water Show started the minute we got into the car to head back to North Park? Elin was all smiles as we sang Happy Birthday and ate cupcakes.
Look how ADORABLE she is.
Dad, Elin, and Mom. I love Elin's face in this picture.
The Carlson Crew.
It was a cloudy day for sure, but isn't Chicago beautiful?
Sunday night dinner and a movie with Sten. It was just what I needed to start the week off right.

This weekend zoomed by. It is so nice to have Sten home and do fun things together! We were introduced at Batavia Covenant and welcomed with many hugs and lots of smiles and prayers. I think this is going to be a great year.

Tonight I am trying a new recipe and I will share it tomorrow. I think it is going to be a hit. The sun is shining and it's almost Wednesday.
xoxo.

favorite things.

This week is almost over. I get to see my little Sten tomorrow!!!! I haven't been able to bring myself to watch Wheel of Fortune without him... it's just not the same. I just can't wait to put my arms around him and hear about all the millions of fish he caught. In the meantime, I have made our home a little more cozy, by cleaning every square inch and organizing. I've also picked some flowers. Here are my favorite nooks as of late: On Sunday afternoon, I took all the books off the bookshelf and re-shelved them by colors. HA! I actually think it looks really good. The other reason I like this shot is you can see many of my hobbies- i.e. drinking wine, saving wine corks, reading, water-color painting, coffee, and cooking. There are many things I like here: #1. Sten and I saved up our Christmas money to buy this coffee table. Everyone needs a good coffee table, and this one is perfect. #2. These fresh flowers are picked straight from in front of Old Main. Thank you North P…

Longs Peak.

About a year ago I hiked Longs Peak. It was something I really wanted to do in Colorado and on whim one of my co-workers and I decided Sunday would be the day. We got up before 3 a.m. and made the drive through the canyon in the dark- scary. We put on our flash light headbands, loaded our backpacks with water and nuts and set out. Here is what I looked like from the top: It took us 6 hours to get to the top. Everytime we turned a bend, we thought-- we're so close, and we KEPT ON GOING.... I was wearing 6 layers of clothing and was still numb when we got to the top. Luckily I had brought some extra socks-- we used them as gloves because there came a point where neither of us could feel our hands. The early morning was incredibly peaceful and tranquil and you could hear little streams of water and the crispness of the air all around you. But when the sun started to rise- wow. I think I said that a million times. It was breathtaking. This is the key hole. Up until this point it is your …

Peanut Butter Banana Cookies. Uh HUH!

Well. Here is how I just spent my mid-morning: And was it worth it. Uh HUH! Tomorrow, my first friend I ever met in Minnesota is coming through Chicago. Her and her husband are moving from New Hampshire back to MN! Breann and I spent many Sunday afternoons after church playing house, dolls, Barbies, talking about boys, and baking. Now she's going to be a mama in December and I just know she is going to teach that little girl to be a baker just like us. These cookies are one of our trademarks, and I just can't wait to sink my teeth into one while talking about her move, JC's new job, the baby, and life.... Here are some updates on my life: Sten is in Sheridan WY fly fishing with his brother and their good friends. It's nice having the whole bed to myself, and turning on the lights when I wake up in the morning, but it's a little lonely as well. Although I have been keeping myself busy :)I have been living up my bachelorette hood! I went for an 8 mile run with Maren o…

Corn dip. you. must. try.

Ahhhhh..... Saturday. Oh how I love today. Slept in, made muffins, explored a new grocery store, made this delicious salsa, and saw HARRY POTTER 7! We are off to our next engagement of the evening at the Anderson's for a "Burb-B-Q", and that is the reason for my recipe today. This is super easy and extremely delicious. Sten and I made sure to give it a taste test before we brought it to the gathering tonight.
Here is the finished product. Fresh, light, crunchy, sweet, salty and decadent. I LOVE this. When I said I explored a new grocery store I wasn't lying. I have been hearing about "Harvest Time Foods" for a while now, but have yet to venture down Lawrence to check it out for myself. I HAVE BEEN MISSING OUT! This grocery store is wonderful. While there you almost feel as though you've transformed into a little European market *almost*... Such great prices too, Sten and I have decided this is our new store. We are in love. We bought LOTS of items and the …
