In an attempt to do some Fall baking I set out on a quest for the PERFECT Fall recipe. And I think I found it. Katie and I got right to work (after a quick stop at Jewel for the essencials). This recipe is seriously easy and SERIOUSLY good.
Do you love whoopie pies? Kate and I do. We made them the first time for a Women's Ministry Cookie Exchange with the church I went to at undergrad. The older women just about died when we told them the name. But, I am pretty sure they were the FIRST thing gone AND the most delish. Ever since then, W.P.'s have had a special place in my heart.
Enough stories, here's the recipe. Make and then re-make and then re-make.

Cookies:
2 1/2 C all purpose flour
1 tsp. baking powder
1 tsp baking soda
1/2 tsp ground cardamon
2 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp salt
1 C sugar
1/2 C brown sugar
1/2 C butter softened
1 lg egg
1 tsp vanilla
1 C pumpking puree

Cream Cheese Frosting:
1/4 C butter, softened
4 oz. cream cheese, softened
1 C powdered sugar
1/2 tsp vanilla

Cookies:
Preheat oven to 350F. Line a baking sheet with parchment
Mix the wet ingredients. Add dry ingredients and mix well.
Drop dough using two teaspoons in small little mounds.
Bake 15 mins, or until golden brown.
LET COOL!
Frosting:
beat butter and cream cheese until smooth and creamy. Add p. sugar and vanilla. Beat until completely smooth.

Assemble then EAT and ENJOY to the fullest with a glass of milk or a cup of Dunkin Donuts Pumpkin Coffee. (new fav)
