a mid-december update + Wild Rice Soup.

Aaaahhhhh.... relaxing. Starting today I am on vacation until after the New Year. I didn't know how to contain myself so I woke up at 5:37a to snow coming down in beautiful sparkly flakes and decided it was high time to update the happenings in life as of late. In the last couple weeks Sten and I have been full speed ahead. Last night at about 6pm he finished the last assignment for the semester. That means we are officially HALF way through Seminary! Other happenings include:
 A visit from my Colorado friendsy friends. A re-cap of what we did: eat Chicago food, shop Chicago streets, and bake Chicago treats. It was such a fun time! You're looking at some of Colorado's finest, and I am the luckiest girl to know them. We crammed into our little apartment and enjoyed just being together!

 The girls left Wednesday morning and then Wednesday evening we had our Small Group Christmas party dinner! We finally got to stretch our table ALL the way out eat a meal with 10 people around. I made Healthy Chicken Wild Rice Soup, we had appetizers, bread, salad, and Glogg, and we all had a merry merry time.

 Small group has been a really great addition to our life this semester. Great people, good book, and intentional God-centered conversation.  I can't wait to see what 2012 brings!

Lastly, I wanted to share the recipe I made for our dinner. It is easy, healthy, and delicious. Enjoy!
Adapted slightly from Skinnytaste: Chicken Shiitake and Wild Rice Soup

I doubled the recipe, substituted green pepper for mushrooms and omitted the sour cream. It was still just as warm and fulfilling.
 Chop up the veggies, then saute the onions, add some flour for thickening....
 Add the rest of the veggies and the chicken broth.....
 lastly add the Rice-A-Roni! What a great little short cut!

  • 1 tbsp butter
  • 1 small onion
  • 1 tbsp flour
  • 8 cups (64 oz) fat free low sodium chicken broth
  • 1 cups water
  • 2 chopped carrots
  • 1 green pepper, chopped
  • 3 garlic cloves
  • 2 celery stalks
  • 4 boneless skinless chicken breasts
  • 1 box Rice A Roni Long grain and wild rice
  • 1/2 cup long grain white rice
  • salt and fresh pepper
Boil chicken in chicken broth, shred chicken and set aside, save broth.

Melt butter in a large pot on medium heat, add onion and saute until soft nut not browned, about 3-4 minutes. Add flour and saute another minute.

Add chicken broth, water, carrots, garlic, celery, and green pepper, cover and simmer 20 minutes. Add wild rice mix along with it's seasoning, long grain rice, shredded chicken, salt and pepper to taste and simmer on low, covered 25 minutes, stirring occasionally.

Phew..... There are a couple more things on the horizon today- such as a Brunch with Sten's family and perhaps a Christmas party tonight. Church tomorrow and then we hit the road for MN! wow. What a month this has been.
