Lastly, I wanted to share the recipe I made for our dinner. It is easy, healthy, and delicious. Enjoy!
Adapted slightly from Skinnytaste: Chicken Shiitake and Wild Rice Soup
I doubled the recipe, substituted green pepper for mushrooms and omitted the sour cream. It was still just as warm and fulfilling.
- 1 tbsp butter
- 1 small onion
- 1 tbsp flour
- 8 cups (64 oz) fat free low sodium chicken broth
- 1 cups water
- 2 chopped carrots
- 1 green pepper, chopped
- 3 garlic cloves
- 2 celery stalks
- 4 boneless skinless chicken breasts
- 1 box Rice A Roni Long grain and wild rice
- 1/2 cup long grain white rice
- salt and fresh pepper
Melt butter in a large pot on medium heat, add onion and saute until soft nut not browned, about 3-4 minutes. Add flour and saute another minute.
Add chicken broth, water, carrots, garlic, celery, and green pepper, cover and simmer 20 minutes. Add wild rice mix along with it's seasoning, long grain rice, shredded chicken, salt and pepper to taste and simmer on low, covered 25 minutes, stirring occasionally.
Phew..... There are a couple more things on the horizon today- such as a Brunch with Sten's family and perhaps a Christmas party tonight. Church tomorrow and then we hit the road for MN! wow. What a month this has been.
