Chocolate Eclair Dessert

Phew! What day is it? We have had another whirlwind week despite my efforts to slow down a little.... Maybe next week??? Oh well! So much fun was had it doesn't really matter.
Last night we had a dinner party with Joel, Megan, Caleb, Emily and us. It was so fun to hang out and eat dinner together and catch up. I made a 'Laurel Print Staple Dessert'. This dessert is fantastic because:
  1. You make it the day before and let it sit in the fridge overnight-- which means: 1 less thing to prepare on the day of your dinner party.
  2. There is no baking involved.
  3. It only requires 6 ingredients
I hope you enjoy this as much as we did!

CHOCOLATE ECLAIR DESSERT:
Filling:
2 (3.5 oz.) boxes vanilla instant pudding
3 c. milk
1 (8 oz.) container Cool Whip
Graham crackers

Topping:
1/3 c. cocoa
1 c. sugar
1/4 c. milk
1 stick butter (or margarine)
1 tsp. vanilla

For the filling: Mix pudding and milk; beat. Stir in Cool Whip. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.

For the topping: Bring cocoa, milk, and sugar to a boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted. Pour over the top layer of graham crackers. Refrigerate over night.


The sad thing is that I didn't get to take a picture of our table or the people at our dinner party... That just means we'll have to do it again!

Sten and I had an afternoon date in Andersonville and then lounged the rest of the afternoon. I am sleepy and can't wait to crawl into my bed tonight!
