Blueberry Bundt Cake.
A couple weekends ago my great friend ANDREW ZIRK planned a brunch gathering, that him and his lovely girlfriend hosted. It was such a good time! So much good food and the best company of friends in the world. As our time in Chicago comes closer and closer to an end, I know these are the moments I will miss the most. A big gathering of friends on a bright Saturday morning crammed into a downtown Chicago apartment.

I tried out a pinterest recipe and I would dub it a success! YUM! Next time I would probably double the frosting, as the cake itself is not very sweet. This blueberry breakfast cake is must try!

  • 2 cups all-purpose flour
  • 1/2 tbsp unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cups sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/8 cup vegetable oil
  • 1 teaspoons vanilla extract
  • 1-2 cups frozen unsweetened blueberries (depending on size of blueberries)
  1. In a large bowl combine the flour, cocoa, baking powder and salt.
  2. In stand mixer cream butter and sugar until fluffy. Add eggs, milk, oil and vanilla; mix on low for about 1 minute.
  3. Add dry ingredients to butter mixture and blend on medium for 30 seconds.
  4. Remove bowl from mixer and fold in frozen blueberries. (To help keep blueberries from falling to the bottom, sprinkle them with a couple tablespoons of flour prior to adding into batter.)
  5. Bake at 375° for 22-28 minutes or until a toothpick comes out clean. 

I can't believe it FRIDAY! So excited for this weekend! It's jam- packed with fun events.
1. Emily and Caleb over for dinner tonight
2. Helping Mandy decorate her new apartment Saturday morning
3. Heading to Winfield with Anne and Peter to hang with the Johnson's Saturday night.
4. Sunday in Geneva with family.
5. That much closer to Wednesday when we get to find out the gender of our baby! I am so excited! I cannot wait.
