Pumpkin Beer Bread
Sunday was the perfect fall day. Pure sunshine and 60 degrees. Sten and I took Lucy out for a little jog and then we sat out on the porch and enjoyed the sound of neighbors raking leaves and jumping from trees into big piles below :) I can't wait until Lucy's big enough to play with the neighbors. I hope she's adventurous, and daring, and takes risks, and has tons of fun.
In the midst of fall gazing I wanted to make a pumpkin goodie. I found this recipe and it looked easy and quick and I gave it a try. It's a winner!
There aren't too many ingredients and the flavor is great. I wish it were a little more pumpkin-y, but we loved it still.
3 c flour
1 tbsp Baking Powder
1 tsp salt
2 tsp pumpkin pie spice
3 tbsp honey
1 c pumpkin purée
1 12oz beer
Combine flour, BP, salt, spice, honey and pumpkin. Slowly add beer and mix until incorporated.
Preheat oven to 375. Grease a 9x5 bread pan, bake for 50-60 mins.
In other news Lucy's surgery went perfect thanks to prayers from friends and family around the world. Lucy is the luckiest girl to have so many people praying for her. We have a post op appt tomorrow and I can't wait to hear what the dr says. At that time we will also learn how to put in her contacts - yikes!!
