I didn't feel like I could welcome Spring when the temps were still in the 20's and we had snow in the 5 day forecast. However, after yesterday's BALMY 60 degrees, I am happy to say Spring has sprung in Menomonie and we are more than grateful.
Here are some happenings over the last week:
THIS happened on Friday.
and THIS happened on Sunday! We had the best afternoon. We ran to the grocery then walked around downtown and took the lake front path home where we quickly put together a snack plate and enjoyed our first deck sit of the season. Lucy was lovin' it.
On Friday when we got dumped with idk how much snow, I needed to bake something warm and cozy. Cinnamon Chip Scones it was! These were amazing!! I halved the recipe, and tweaked it a little, you can find the original recipe HERE.
Cinnamon Chip Scones
Yield: 6 servings
1 1/2 + 2 Tbl Flour
3 T Sugar
1 1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1/2 tsp cinnamon
6 Tbl Butter
1/2 C Buttermilk (I used vanilla soy milk)
1 tsp vanilla
1/2 package cinnamon chips
Combine first 6 ingredients, cut in butter then fold in milk and vanilla, then fold in cinnamon chips. Knead 10-12 times. Pat or roll into a 7 inch circle sprinkle with butter, then cinnamon sugar. cut into 6 wedges, seperate wedges and bake at 425 for 10-13 minutes.
