Chocolate Banana Cupcakes with Butterfinger Swiss Meringue Buttercream





Chocolate Banana Cake

Recipe note: below is the directions to bake as cupcakes. But, this would also be a fabulous bundt cake!

You will need:
1/2 cup coconut milk
1/2 cup ripe banana (about 1 banana)
1/3 cup canola oil
1 teaspoon vanilla extract
3/4 cup sugar
1 cup all-purpose flour
1/3 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon cinnamon

Preheat oven to 350 degrees F. Line muffin pan with paper liners.

In a small bowl, mash the banana with a fork. Whisk in the coconut milk, sugar, oil, and vanilla extract until incorporated. Mixture will still be a little lumpy because of the nature of the banana, but whisk out as many large lumps as you can. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Make a well in the center of dry ingredients and pour in banana mixture. Stir until just smooth (do not overmix).

Pour into liners, filling each with 3 tablespoons of batter (cups should be no more than 2/3 full). Bake 18-20 minutes, or until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

Butterfinger Swiss Meringue Buttercream

You will need:
4 oz egg whites (3-4 large egg whites or about 1/2 cups)
1 1/2 cup granulated sugar
1 lb unsalted butter, room temperature
2 tsp vanilla extract
6 fun size butterfingers, frozen and chopped
plus 1 butterfinger, chopped for garnish

Lightly whisk egg whites and sugar together over simmering water in a double boiler until egg-white mixture is hot to touch or a candy thermometer reads 140°F (60°C).

Pour hot whites into a room-temperature bowl and whip at medium high, with a wire whip, until double in volume and stiff peeks have formed. When the mixer stops, the meringue should not move around in the bowl. Meanwhile cut up butter into 2-inch pieces. (The butter should be slightly moist on the outside but cold inside.)

On your mixer, remove the whip and attach the paddle. Add half the butter into the bowl immediately and pulsate the mixer several times until the meringue has covered the butter completely. To pulsate the mixer, turn it on and off in a jerky motion. This forces the butter on the top to the bottom of the bowl. Add the balance of the butter and pulsate mixer several times. Slowly increase the mixer’s speed, starting with the lowest speed and increase the speed every 10 seconds until you reach a medium high speed.

Continue beating until the mixture begins to look light and fluffy. Stop the mixer and scrape the bowl. Reduce speed to LOW. Add vanilla and butterfinger, continue to beat on LOW speed for 45 seconds. Then beat on MEDIUM-HIGH speed for an additional 45 to 60 seconds.

Leftover buttercream can be placed in plastic containers with lids and kept in the freezer for up to 3 months. Defrost completely (several hours) and rewhip before using.

Storage: Store the icing in an airtight container and freeze for up to 3 months.

Yields: enough buttercream to frost 24 cupcakes

Dan and Pam +

 One of our favorite weeks of summer came and went: When Dan and Pam visit. This means lots of family time at Big C. Everything is a game and there are lots of laughs-- never ending fun. It always goes by so fast and it’s sad to see them go.  This year we did something super different and took a 24 hour trip to show off Duluth to Pam. J is the best trip planner and when she sent me the itinerary I knew it was going to be a good time.  Here we are in our little hostel room. I slept like a rock thanks to half a sleeping pill. Seriously. I slept over 9 hours and didn’t even wake up to go to the bathroom!  Found just a couple rocks to skip 😂  Here we are at split rock lighthouse. Wolfpack.

We had a good day with these lifetime friends of mine. PHS class of ‘04.  Linds is so good at getting everyone together. She planned this whole day and then everyone took the day off work/ got kids out of activities and sports and made the effort to see one another.  Friendship of 35 years is a true gift. I feel like these girls watched me grow up. From playing boxcar children in the basement to jr high shenanigans/ all the trips to Treasure Island to studying abroad together in Italy to visiting each others first homes/ attending weddings /welcoming in motherhood and most recently keeping up on Marco Polo I am thankful for these gals.     Recreating a picture from 7 yrs ago 😂  As we were saying our goodbyes we looked down and BURST into laughter. Must be a 40 yr old thing.  Memories upon memories with this crew.  xo. edc.   

goodbye summer 2026

I headed back to BHP today after what may have been the best summer ever. If you would have asked me a week ago if I was ready to go back I would have said no, but I think God does a good job of preparing our hearts for big changes if we allow him to, and I truly felt prepared walking into school today.  My classroom has a ways to go to be ready to welcome in students to meet the teacher night on Wednesday-- but I know I'll get there.  Routine is good, and I packed my lunch last night, laid out my clothes and after work today headed to the grocery before grilling up some chicken for dinner. I needed something to remind me that I love feeding my family well, being somewhat organized and nights at home after a day away. Here are some summer lasts: Mornings on the front porch with coffee + 1 kid + a game?!?!?
