Longer days.

I love that moment when you realize the days are getting longer and it’s staying lighter past 4:45pm!  I’m on a run streak, and I’ve been getting most of my runs this week when sten gets home from work around 5... I don’t have to turn on my headlamp until about 1/2 through my run and it’s amazing!!! I complain a lot about the winter, but getting out every single day this month to run outside has given me so much joy. I have loved crisp air in my lungs and crunchy snow on the ground. It’s pushing me out of my warm comfort zone and forcing me to do something that I would rather not. Discipline!  About to head out for a morning run while my house sleeps. xo. edc.

Patch Partayyyy! 🎉

Look at this happy girl smiling HUGELY bc she is DONE with patching after 7 years!  Lucy got the green light for being done with patching the week before we went to Mexico so we decided to bring a cake mix, some balloons, streamers and noise makers and have a patch party! She had 4 patches left so we brought those too and said ADIOS to patching!  This beautifully decorated cake comes to you courtesy of sissy.  Dad and Lucy  Lucy and Olive Uncle Mikey mom and Lucy  Of course grampy was wearing the donut patch! I’m so proud of Lucy and her resilience in patching. I’m proud of sten and myself too, for all those early days when we had to fight hard to keep that patch on. When we were asked a MILLION times why she has a bandaid over her eye, or if she’s a pirate or if she even has an eyeball under there... and I’m thankful for the outcome. Lucy is seeing 20/30 out of her cataract eye!!! That’s nearly unheard of for someone with her condition.  Enjoy patch free l...

Weekend things.

A run through narnia. The frost on the trees right now is breathtaking.  I trimmed sigges hair. You wouldn’t be able to tell. But it was a big day nonetheless.  This guy was extra snuggly.  I feel like when I sit down I always have a child on me.  Found this funny little sequence on my phone. There were more, have no fear.  It’s Monday and the countdown is on for Mexico! I have so many things to do 😳.  xo. edc.

Mexican Chicken Soup + banana bread.

1st new recipe of 2020. Mexican chicken soup.  Found HERE . It was tasty! Sten and I really enjoyed it. I didn’t even attempt to feed it to the kids because it didn’t make that much (and I wanted leftovers) and I just knew it would be a battle. Sometimes feeding my kids is like raising a white flag and giving them noodles with butter and Parmesan cheese.  I also made THIS “healthy”-er banana bread this morning and it was SO good. I got rave reviews from the kids and adults alike. I used 100% whole wheat flour, and honey instead of white sugar and baked it for 75 mins.  Happy 2021 baking/ cooking to me! xo. edc.  PS. In other news, not to brag, but sten and I + 3 kids will be on this beach in less than 2 weeks!!!!!! Look at that young little Sten and Erica! Ahhhhhhh!!!!!!
