Almond Coffee Cake and weekend visits

This weekend Sten's mom came to see our new place! It was so fun to show her around and explore our new town together. If there is one thing I know about Meredith it is that she loves anything almond-y. In fact, the Christmas Almond cookies I made are her specialty and I owe her all the credit for those Christmas cookie staples.
I googled "Almond Coffee Cake" and came across a few different recipes. I really wanted to make it in a cake pan instead of a bundt and so I kind of improvised and made my own version adapted from this blog as the cake base. It turned out great! the cake part was very moist and flavorful- I would totally make this again.


Here is the recipe I used:
1 C Butter
1 C Sugar
3 Eggs
2 1/2 C Flour
2 tsp Baking powder
1 tsp Baking soda
1 tsp Salt
1 C Sour Cream
1 tsp Almond extract
____
Cinnamon Sugar/ Brown Sugar
____
Topping:
1/4 C Butter
1/2 C Brown Sugar
1/2 C Slivered almonds
1 tsp Almond Extract
1 tsp Cinnamon

Preheat oven to 350 degrees.
Cream butter and sugar, add eggs, sour cream and almond extract. Mix together dry ingredients and add to the butter mixture. Pour half the batter into a greased 9x12 baking dish.
 Sprinkle with cinn/sugar and brown sugar.
 Top with remaining batter.

Mix all the topping ingredients together then sprinkle on top. Bake for 35 mins. ENJOY! We sure did!

Other than eating Almond Coffee Cake we really jammed a lot into a weekend! Meredith got here Friday just in time for dinner. After a quick tour of the house, we headed to the river to dine at Jake's Supper Club:
Saturday we spent the morning on the deck basking in the sunshine and enjoying the birds before we hit the downtown strip and looked at a lot of antique stores. I think I found a dresser for the baby room!
We ended at Legacy Chocolates in downtown Menomonie and did a little chocolate tasting.

 After Legacy we decided to check out this little winery Sten had seen advertised around town called "Cottage Winery" it is just past our church and you would think you are in a fairy tale when walking up. I can't wait to go back for a tasting after the baby is born! It was so quaint and looked like the perfect spot to bring friends on a fall day.
Last night we made grilled pizza and sat on the patio until dusk. The perfect way to end a perfect weekend.
It was so fun having Meredith here. We love having visitors! It is great to be right off 94 so people can pop in on their way to and fro Chicago- Minnesota! This week, Kristy, one of the band members/good friends from Batavia came through town as well as Lee and Becky from our small group! It was great to catch up with friends and share this next chapter of our lives with those we love!

goodbye summer 2026

I headed back to BHP today after what may have been the best summer ever. If you would have asked me a week ago if I was ready to go back I would have said no, but I think God does a good job of preparing our hearts for big changes if we allow him to, and I truly felt prepared walking into school today.  My classroom has a ways to go to be ready to welcome in students to meet the teacher night on Wednesday-- but I know I'll get there.  Routine is good, and I packed my lunch last night, laid out my clothes and after work today headed to the grocery before grilling up some chicken for dinner. Wolfpack.

We had a good day with these lifetime friends of mine. PHS class of ‘04.  Linds is so good at getting everyone together. She planned this whole day and then everyone took the day off work/ got kids out of activities and sports and made the effort to see one another.  Friendship of 35 years is a true gift. I feel like these girls watched me grow up. From playing boxcar children in the basement to jr high shenanigans/ all the trips to Treasure Island to studying abroad together in Italy to visiting each others first homes/ attending weddings /welcoming in motherhood and most recently keeping up on Marco Polo I am thankful for these gals.     Recreating a picture from 7 yrs ago 😂  As we were saying our goodbyes we looked down and BURST into laughter. Must be a 40 yr old thing.  Memories upon memories with this crew.  xo. edc.

Dan and Pam +

 One of our favorite weeks of summer came and went: When Dan and Pam visit. This means lots of family time at Big C. Everything is a game and there are lots of laughs-- never ending fun. It always goes by so fast and it’s sad to see them go.  This year we did something super different and took a 24 hour trip to show off Duluth to Pam. J is the best trip planner and when she sent me the itinerary I knew it was going to be a good time.  Here we are in our little hostel room. I slept like a rock thanks to half a sleeping pill. Seriously. I slept over 9 hours and didn’t even wake up to go to the bathroom!  Found just a couple rocks to skip 😂  Here we are at split rock lighthouse. We were too cheap to go into the actual park and get the tour so we listened to a podcast on the way home instead haha  The fog hadn't burned off yet and it made for the most beautiful backdrop.  Perhaps the highlight for me: burrata and wine on the rocks of gooseberry falls.
