Date 2/2 + Birthday week.

 I don’t have picture of our date to Pedro del Este on Friday night… so I grabbed this one from our Chicago days at our other favorite tapas restaurant… Hudson… Chicago…. Basically the same-right?? We were so excited about this date. I kept texting sten throughout the week- 3 days until our date, 2 days until our date…. I wish this was how I spent every Friday night. I think Pedro Del Este is our new favorite spot. The food is so yummy and the atmosphere is so cozy. Already looking forward to our March date!  On Saturday the kids spent the $$ they got from Valentine’s Day on toys at Target and then we made homemade pizza for dinner and had the Peters over. Who would have ever thought that one of my dearest high school friends husband would play basketball with sten and that we would live just one town over?? Sigge is 3!!

How did my baby get so old? I miss his squishy little baby body, his white haired 1 yr old days and his crib naps that would last for hours. But I love his sudden decision to give huge hugs and say “I love you mom”, his emphatic insistence on wearing shorts even tho it is 7degrees, his prayers that include everyone around around the table he is thankful for (and whatever else he happens to see when he peeks his eyes open), his love of bacon, avocado toast and blueberries, his ability to repeat song lyrics and the way he sings them and his engineering mind while building with magnetiles.  Last weekend’s celebration with fam. and moms Batman cake she made! Oh Sigge boy! You sure are special to us. We love you so much and think your jokes, fake crying and laugh make our world a brighter place. Never stop being stubborn or loving others BIG.  Happy Birthday to my baby! xo. edc  

The BEST granola

The BEST granola IMO.  This recipe has been tested a bunch of times and I finally really nailed it. My kids don’t like it with raisins or other nuts in it, but you can add those if you like by following this recipe.  My recipe below is exactly how I make it, loosely going off the one I found above.  1/2 cup coconut oil (melted) 1/2 cup honey 4 cups old fashioned oats 2 tsp cinnamon  1/2 tsp salt Mix. Then spread out on a parchment lined baking sheet and bake at 300* for 35 mins stirring half way through. Let cool and then break a part and transfer to an airtight container. No idea how long this lasts because it’s usually gone within a couple days at our house :) xo  edc    

My favorite hummus.

 I’ve been making this hummus for the last couple weeks and it’s the BEST. Worth the mess and hassle of taking out the food processor and getting all the ingredients. Here’s the recipe: 2 cans garbanzo beans 1/2 cup tahini 1/2 c lemon juice 2 garlic cloves 1tsp cumin 1/4 C olive oil 5-6 T aquafaba  Salt to taste.  * add some parsley if you have it! Blend!  I doubled the recipe from the link I shared because it’s so good and we eat it up fast at our house.  xo. edc. 

This week.

Sten is out in Colorado this week and although we miss him greatly we’ve been keeping busy at home!  Checked off my February Willow River hike with Ashley and Sigge yesterday The kids asked to sleep in their “nook” aka closet and they slept all night snuggled up together and I wanted to die of love.  Sigge has been so into play doh and kinetic sand. I think that’s what I’ll get him for his birthday. 1 week left of being 2 😢 My favorite mug that makes me so happy. I felt an intense amount of joy while thinking about drinking out of this mug forever.  xo.edc.

 we are 1 week into feb.... how did that happen?  I haven't been updating my little corner of the world and now I worry there will be a whole missing piece between jan and feb 2022 :) there's been lots of good days. its been the coldest jan since 2014 and i can feel that deep down in my bones. i'm sick of being cold, and i'm sick of talking about being cold... but i can't help it. im just cold. spring is going to feel like the biggest gift this year and i plan to embrace it wholeheartedly-- picinics outside, lots of porch sits, tons of park dates, all the morning vitamin d. highlights of the last couple weeks include: our january date which included happy hour at home while sigge napped and the kids were at school one friday. we just couldn't squeeze in an actual date and used up all our money for a babysitter at the beginning of the month for a church event. #planningfail. im still counting tho, because we intentionally put our phones away and hung out for a so...
