Mexican Mole, oatmeal cookies and cooold

 How are we already this far into February?!?!  The days are flying by, and I can't even believe how cold it is. I should be used to this-- but I'm just not quite there :) 2 more recipes down for trying lots of new recipes in 2021. We signed up for a cooking class from the chef we hired in Mexico and it was so fun to learn how to make mole! Lots and lots of ingredients and a million steps, but very fun non-the-less.  I have been tyring to be more mindful of what goes INTO my shopping cart, becuase inevitably it is me who ends up eating so much of the junk food-- WHY????? So, I had limited baking supplies on hand and Olle had a friend over and they wanted to make cookies... Arizona Salad

This is my new favorite salad. It's crunchy, unique, and has sweet and salty components which makes it really tasty. Here is the recipe as it was emailed to me.... I totally guessed on the ratios, and it turned out great, I don't think you can mess this up. The food processor was key, as I don't think you'd want to sit and chop Brussel Sprouts for hours :) Chopped Brussel sprouts* Chopped spinach Shaved Parmesan Chopped avocado Chopped almonds Cranberries or Craisins Balsamic or Citrus dressing of choice! *we use a food processor...enjoy! carlson street tacos.

This has become a favorite dinner in our house. The flavors are outstanding, its quick and easy and it makes me excited for our trip to Mexico in January.... 3 pretty great reasons to make it tonight! Carlson Street Tacos. 10 oz. can of chicken in water 1/3 C. Pioneer Woman Chipotle Salsa- link HERE 6 corn tortillas onion, peppers, cilantro, cumin, s + p, lime juice heat salsa over low heat, add the chicken until warm. heat the tortillas in a  skillet until warm assemble tacos serve with black beans and rice. Pumpkin-Peanut Curry Noodles with Five-Spice seared Scallops and Shrimp.

The season's of our Friday nights have dramatically changed over the last couple years. When we moved back to Chicago we made it our goal every Friday night to find the best BYOB in the city. We found some gems (and some duds) but it was the most fun tradition. When we found out we were pregnant the idea of getting back on the train to go anywhere sounded awful, so we opted for take-out nights in. Our neighborhood was full of diverse foods and we had fun trying new things. Our favorite by far was splitting a burrito from Lindo Michocan . We thought it was so great that we could both eat for under $4 (if we didn't get the chips and salsa). Now with little Lucy girl, and perhaps because Menomonie isn't necessarily diverse OR full of fun new restaurants to try we decided to start a new tradition: picking a fun recipe and cooking it together once Lucy goes to sleep. Homemade Mac n Cheese

This week I made homemade Mac n Cheese. I searched on pinterest and found one labeled "The best Mac n Cheese ever" so naturally I had to give it a try. I personally have never made homemade macaroni and cheese, so I have nothing to compare it to. However, I will say- this is REALLY tasty, and I will probably use this recipe for the rest of my life :) I'm such a sucker for traditions. Growing up my mom would let us pick whatever we wanted for dinner on our Birthday. For many, many years I chose macaroni and cheese. I hope to continue that tradition, as it always seemed extra special when mom was making something JUST because it was your day. My sister always chose Chicken Tetrazzini. Isn't it funny the things we remember? Sten was gone at a 1-day conference just outside of Chicago this week. Salsa Verde Chicken

Sten and I have been busy these last couple weeks. Sten with Fall kick off at church and me with getting everything ready for baby. I have been trying new and easy recipes lately and have been trying to post the good ones so I remember to make them again when sleep is at a minimum. This recipe I found on one of my favorite blogs Always Seeking Balance. I don't know where Sue got the recipe from originally, but it is a winner and a keeper for sure! Sten and I LOVED this. Sten always jokes when he likes a recipe he snaps and points his finger in the air and says- "add it to the rotation!". Then we laugh. Needless to say, I will definitely be "adding this to the rotation" because it was probably the easiest thing I've ever made. Low Carb Chicken Enchilada Bake.

The other night I made this pinterest recipe. It was very easy and extremely delicious. I really haven't been finding new recipes lately because we have just been grilling so much this summer, so it was nice to get into the kitchen and chop, dice and assemble a meal! We loved how it turned out and there were leftovers, which is always the best part :) In the past week I have been trying to set the table and have dinner ready when Sten gets home. I appreciated this growing up, and hope to continue to make dinner time a really special time to be together as a family. Yesterday I even used our cloth napkins- I thought to myself- why not??  The ingredients  I didn't buy low carb tortillas because I already had these... so I guess, I can't call this recipe Low Carb :)  Chicken Mixture  Corn and Black Bean layer.
