Chipotle Salsa + Lucy pics.

The other night we made this salsa and I have to share it. It's from The Pioneer Woman's Holiday Cookbook we received from Aunt Mim. This salsa was SO easy to make and incredibly delicious- we both said it might be our favorite. ever . It made a ton, which is good, because chips and salsa is a staple in the Carlson household. Chipotle Salsa Pioneer Woman 2 (15oz) cans diced tomatoes 1 (10oz) can rotel 1 medium onion, diced 1-3 (depending on your heat tolerance- we did 3) chipotle peppers packed in adobo 1 tsp ground cumin 1 tsp salt 1/2 tsp pepper 1 tsp sugar 1 bunch cilantro, stems roughly removed 1/4 cup lime juice Into a blender add, tomatoes, onion, chipotles, cumin, salt, pepper, sugar, cilantro and lime juice (so everything :) Blend until totally combined. Homemade Tortilla Chips

Happy December! What a wonderful month as we anticipate the birth of Jesus Christ! I love all that Christmas brings and I am excited to celebrate with Sten's family at the end of the month. This week has not felt like December. The last 3 days have been as high as 70 degrees... Sten and I even went for a run in shorts and t-shirts! I love it! I have no complaints, I know that the snow will come and will stay for many months to come. I have no idea where I got the recipe for homemade tortilla chips, but it was pre-pinterest and pre-blogging. These are a great alternative if you want a super duty crunchy chip with your favorite pico. Sten and I made these Sunday and I had visions of a Mexico beach with the sun crisping my skin ahem January 7th can't come soon enough. I hope you will enjoy these as much as we do.
